Model Rooms (On display soon)
In June, two model guest rooms at
Fairmont Pacific Rim will be complete and
ready for viewing. We look forward to
showing them to you! The design of our
guest rooms is based on an exploration of
luxury: streamlined furniture pieces and
clean woods exemplify an understanding of minimalism and restraint, while lavish
fabrics and custom millwork help to create a
warm, opulent setting. The fresh, silvery
champagne tones add the airiness of the
natural landscape.

Tourism Marketing Management from the

Culinary Talent Set to
Heat Up Fairmont Pacific
Rim Kitchens
As mentioned in our March
newsletter, the design of
Oru—our upscale Asian brasserie—
continues at a confident pace. In addition,
our Italian bakery/deli has been named
“Giovane’s,” and details are now being
finalized for the Fazioli piano that will
serve as a focal point for the lobby lounge.
Much to our delight, the crucial decision
of appointing an executive chef is also
behind us. |

After representing Canada—and finishing
9th—at the 2009 Bocus d’Or, the world’s
most prestigious culinary competition,
David Wong is excited to take on his next
challenge: opening Fairmont Pacific Rim’s
three food and beverage outlets, as well as
the banquet kitchen that will service our
1,400 square metres (15,000 square feet)
of function space.
“I am so excited to be joining the
Fairmont Pacific Rim team,” says Wong.
“We are going to be a destination dining
location that will truly be unique in

Vancouver. Asian brasserie food speaks to
people on the West Coast. Our cuisine will
have authentic flavour profiles, prepared
with progressive techniques and presented
uniquely with modern flair.”
David held previous roles at The Fairmont
Vancouver Airport and The Fairmont
Hotel MacDonald (in Edmonton). It is our
pleasure to welcome him back to the
Fairmont family.

On March 28, Fairmont Pacific Rim
joined our 55 sister properties around the
world in support of Earth Hour; this global
event, created by the World Wildlife Fund
(WWF), combats human–induced climate
change. While other Fairmont properties
offered candlelight dining and dimmed
iconic signage, our construction crew
eagerly joined in the fun by (among other
gestures) turning off crane lighting for the evening.

A small step, yes. But, symbolic
of our many environmental initiatives
to come.
And the construction team presses
along. With sights to finish the two model
rooms, the team has recently completed
dry-walling throughout the building; the
millwork and marble has been completed
up to the eighth floor.
Directly across the street from Fairmont
Pacific Rim, the Vancouver Convention
Centre has been involved in some
construction of its own—namely, a
beautiful, 31,400–square–metre
(338,000–square–foot) expansion. (In
April, I had the pleasure of attending
their grand opening, as one of the ribbon
cutters.) What an exciting addition to
the city, and an exciting new neighbour
for us. Their expansion, built over land
and water, with floor–to–ceiling glass
throughout, reveals the same incredible
views that guests will soon enjoy from our
hotel. The Vancouver Convention Centre
also shares Fairmont’s commitment to
sustainability: an inspiring dedication that
can be found in everything from their
green roof to their seawater heating and |

cooling system to the fish habitat built into
their foundation.
Speaking of the Convention Centre,
Fairmont Pacific Rim will surely be the
hotel of choice for convention delegates
looking for the ultimate in luxury and
convenience. After all, we’re directly
attached to this magnificent facility.
